Sticky Ginger Chicken Thighs

Ingredients
  

  • MARINADE
  • 1/2 CUP GRATED ONION
  • 1/2 CUP PEANUT OIL
  • 1/3 CUP RICE VINEGAR
  • 2 TBSP WATER
  • 2.5 TBSP GRATED FRESH GINGER
  • 2 TBSP KETCHUP
  • 5 TSP SOY SAUCE
  • 2 TSP SUGAR
  • 2 TSP LEMON JUICE
  • 1/2 TSP MINCED GARLIC
  • 4-6 CHICKEN THIGHS
  • 3 GREEN ONION STALKS
  • 2 LIMES
  • SESAME SEEDS TO GARNISH

Instructions
 

  • Combine all sauce ingredients in a large bowl and set aside.
  • Place chicken thighs into a zip lock bag and add approximately 3/4 of the dressing to cover. Place in the refrigerator to marinate for at least 1 hour.
  • When ready to cook, set temperature on Traeger to High and preheat, lid closed for 15 minutes.
  • Place marinated chicken thighs on the grill grate, skin side down. Cook for 10 minutes, flip and cook another 10 minutes.
  • Cut limes and green onions and place on chicken. Cook for an additional 5 minutes. Enjoy!
  • *Cook times will vary depending on set and ambient temperatures.

Notes

You can serve this with lots of variations.  I usually love to put it with basic white rice if I make extra sauce, or with some noodles, or even on a bed of mixed greens.  Everyone I have made these for loved them, enjoy!
