Finding a good gluten-free recipe for pasta has been a challenge, but this one was worth the experimentation!
Gluten Free Pasta Recipe
Finding a pasta recipe that is gluten free and still workable has been tough! After a lot of trial and error, this is my favorite version so far.
Ingredients
- 1.5 cups Brown Rice Flour
- .5 cup Tapioca Starch
- 1.5 tsp Xanthan Gum
- 4 Eggs (large)
- Kosher or Sea Salt
Instructions
- Whisk together the flour, tapioca starch and xanthan gum together thoroughly. Add the eggs and stir until the dough forms. Dust your counter or rolling board with a good dose of extra brown rice flour. Turn the dough out onto the counter and knead until it has become pretty smooth.
- Divide the dough into 4 equal pieces. While working with one piece, be sure to keep the remaining pieces wrapped or covered to avoid drying out. Press the dough to slightly flatten it. Set your pasta machine sheeting at the widest setting and run it through several times (at least 3). Then keep rolling the dough through while making the settings more narrow as you progress until you reach your desired thickness (I usually stop at the second or third to last setting).
- Cut dough sheet in half horizontally and pass each through the fettuccine cutter. (I don't recommend the spaghetti setting with this dough) Dust pasta with brown rice flour and place on a baking sheet. Repeat with remaining dough pieces.
- Generously salt your water and bring to a boil. Cook pasta until it is tender (5-6 minutes). Serve immediately and enjoy!
